Adrian: Untitled Cocktail Recipe

1.50 oz Illegal Mezcal

1.50 oz Lemon/Lime Shrub

0.75 Salers Gentiane Aperitif

Walnut bitters

Candied lemon (saved from the oleo saccharum used to make the Lemon/Lime Shrub)

Shake with ice, strain, serve over ice.

1.50 oz Bourbon

0.75 oz Lemon Juice

0.25 oz Allspice Dram

0.50 oz honey syrup*

0.25 oz Cherry Heering

Add bourbon, lemon juice, allspice dram, and honey syrup to a cocktail shaker. Add ice and shake until well chilled. Strain over an ice cube, top with Cherry Heering.

*Honey Syrup:

1.5 ounces honey

0.5 ounce hot water

Stir hot water into honey until honey is dissolved. Let cool.

Holly: Popcorn Sour

50 ml buttered popcorn-infused bourbon*

20 ml lemon juice

10 ml gomme

10 ml egg white

Add all ingredients to a cocktail shaker along with lots of ice, and shake well to create a good foam. Strain into a rocks glass filled with cubed ice and garnish with an orange (or skewered popcorn!)

*Popcorn-Infused Bourbon:

Fill a medium-sized Mason jar with freshly-made buttered popcorn and fill with bourbon. Infuse for 24 hours. Strain the liquid into a clean jar and put in the freezer for a couple of hours to solidify the fats. Remove from the freezer and skim off the solidified fat, before straining through a coffee filter.

Maria: Aztec Orange

1.5 oz Espresso Bean-Infused OYO Honey Vanilla Bean Vodka*

0.5 oz Cointreau

1.0 oz fresh orange juice

3–4 drops Fee Brothers Aztec Chocolate Bitters

Shake with ice, strain, serve up or over ice (slightly diluted)

* Espresso Bean-Infused Vodka

Rough chop espresso beans, and to vodka at a ratio of 1/4 cup beans per two cups vodka, infuse for at least four hours.

1.0 oz Agave (some drinks were mixed with habanero-infused agave, others were mixed with lavender-infused agave—not sure if I have this right, not sure how to infuse the agave)

1.0 oz Lime Juice

Shake with ice, strain, serve over ice with applewood smoked sea salt (from Saltworks @ www.seasalt.com)

0.5 oz St. Germaine Elderflower Liquor

Shake with ice, strain, serve over ice.

0.75 oz Rye

0.75 oz Gin (used Plymouth Gin)

0.75 oz Bonal

0.75 oz Meletti Amaro

2 dashes Bittermens Elemakule Tiki Bitters

Stir over ice, strain into a coupe, and garnish with an orange twist.
